In 2007 Graeme Pallister set out to create a restaurant following his guiding principles of LOCAL – HONEST – SIMPLE. The result is 63 Tay Street restaurant, situated in the heart of historic Perth.
Perthshire-born Graeme Pallister and his small team, are passionate about using the best quality ingredients, from local suppliers, with the greatest care and attention going into every dish prepared.
Graeme trained at Kinloch House Hotel in the mid-90s, and has since worked at Longueville Manor in Jersey, The Angel in Sussex, Restaurant Andrew Fairlie at Gleneagles, and Let’s Eat Perth (Dean’s Restaurant), where he was head chef for 2 years before opening 63 Tay Street in 2007. Graeme is also executive chef at Parklands Hotel, Perth.
63 Tay Street is adjacent to the River Tay, which passes through the town with views towards Kinnoull Hill on the other side.

Since it opened, 63 Tay Street has won numerous awards. Recognised for the food, the wine list and the team. Graeme Pallister was crowned ‘Chef of the Year’ at the Catering in Scotland Awards in 2013.

EXTENSIVE WINE LIST
Good food requires good wine and we source our wines with the same care as we source our food. We have built a very good relationship with our suppliers, all of whom are independent, often small and specialist wine merchants.
